Per questa ricetta puoi usare sia i filetti di persico che di cernia o meglio ancora di gallinella. Che scoperta i filetti di gallinella, quanto sono buoni! In ogni caso invece eviterei filetti meno cicciotti come quelli di rombo, perchè sono troppo bassi e si sentirebbe troppo la crosta e poco..pesce.
Ingredienti x 2 persone:
400 gr di filetti di persico
50 gr di pistacchi
100 gr di pan grattato
qualche rametto di prezzemolo
olio evo q.b.
Fai un trito di prezzemolo e pistacchi, aggiungi il pan grattato e irrora il tutto con l’olio. Mescola bene e disponi il trito condito su un piatto. Il sale non serve, perchè i pistacchi sono salati di loro. Prendi i filetti ad uno ad uno (se usi il persico, che normalmente è un filetto gigante, ricavane delle monoporzioni a tuo piacimento) e, dopo averli passati nell’olio, “impanali” nel piatto con il trito.
A questo punto hai due possibilità: puoi cuocerli in padella antiaderente a fuoco basso per una decina di minuti o poco più (5 per lato) oppure infornarli per 20-25 minuti a 180° (forno preriscaldato ventilato). La seconda scelta è leggermente più “sana”, io ho optato per la prima…!
Mai fatti i filetti di pesce con i pistacchi, ma mai dire mai, visto che sembrano veramente gustsosi ^_^
