Nel tentativo di correre dietro ai progressi della tecnologia, finisce che mi perdo in in un bicchier d’acqua nelle cose più elementari: a chi è capitato di recente di dover spedire una lettera? Non dico una raccomandata alla posta né tanto meno un’e-mail, ma una lettera di quelle semplici, col francobollo…tanto per cominciare: esiste ancora la posta prioritaria??
Ammetto di aver avuto qualche remora a chiederlo al tabaccaio, per non passare per una vecchia babbiona anacronistica. Fatto sta che in prima battuta preparo la lettera, me la faccio stampare (io sono diventata talmente virtuale che non sono nemmeno stampante-munita!) e me la metto in borsa, così appena passo davanti al tabaccaio compro una busta da lettera e il famoso francobollo. Ebbene, appurato che quello di posta prioritaria esiste ancora, o meglio che esiste SOLO quello, sigillo la lettera nella busta e ci appiccico il francobollo con la lingua.
Adesso non resta che imbucarla in una cassetta delle le…ops. Ho dimenticato l’indirizzo a casa. Ho la cassetta delle lettere davanti e l’indirizzo a casa, che rabbia! No problem, penso, la spedisco domani. Se non è domani, sarà do-po-do-ma-ni. E se non è dopodomani…ok, lo ammetto, la lettera è rimasta un po’ nella borsa…un po’ nel senso di…ok lo dico, sarà stato un mesetto. Non è che io non ci abbia mai pensato a spedirla, sia chiaro, ma per una curiosa coincidenza ogni volta che mi tornava in mente la lettera non avevo mai quel bastardo di indirizzo a portata di mano.
Poi, dopo che finalmente un bel giorno mi procuro l’indirizzo, tiro fuori la lettera e scopro che ormai è bella stropicciata e, soprattutto, si è proprio aperta in ben DUE angoli. Accidenti, che disdetta! La devo cambiare. E così il francobollo, ormai incollato alla busta come una cozza al suo scoglio.
Ma perché tutti i tabaccai da cui entro si stupiscono se chiedo un francobollo? Hanno dimenticato che un tempo li vendevano loro? Allora delle due l’una: o mi ha detto culo alla prima volta che l’ho trovato subito, oppure è evidente che nell’arco di un mese tutti i tabaccai sono stati colpiti dal morbo di Alzheimer. Uno mi ha pure risposto: ‘Sono un tabaccaio perché vendo tabacchi, mica valori bollati!!‘.
Ok, la prossima volta lo chiederò in pescheria.
In ogni caso, alla fine, ma proprio alla fine, riesco a mettere in croce una lettera, una busta, un francobollo e tanto di indirizzo: la mia missiva parte con le poste italiane. Ma quanta fatica? Quanto è più rassicurante una semplice ed immediata (nel senso di non-mediata) e-mail…? 🙂
Solo due sono le categorie di lettere cartacee che lascerei sopravvivere: le lettere d’amore, ovvio, e le ricette regalate.
Sì, le ricette regalate. Come la ricetta di questa pasta frolla, un foglietto ricevuto dalla mia amica Alessia, una ricetta di una sua amica, e chissà la sua amica da chi l’ha avuta. Da chiunque provenga in origine, la ricetta di un amico è un regalo prezioso: nell’era dei messaggi elettronici, quel pezzo di carta consegnato a mano da chi ti vuole bene resterà con te, invecchiando tra le pagine del tuo ricettario, tra una macchia d’olio e una di caffè.
Così, un po’ perché proviene dal cuore, un po’ perché questa ricetta è davvero vincente, sta di fatto che grazie a questa ricetta della pasta frolla sono riuscita ad avere un risultato dignitoso alle prese con un dolce che nelle mie mani non ha mai avuto una grande riuscita: la crostata. Dolce ma non troppo, soffice ma non troppo, friabile ma non troppo… insomma: il risultato è garantito, come in foto.
Crostata alla marmellata di zucca e zenzero
Per la pasta frolla (dosi per 2 crostate da 20 cm di diametro):
250 gr di burro – 9 cucchiai di zucchero – 3 uova – 600 gr di farina – 1 bustina di lievito – 1 baccello di vaniglia bourbon (la ricetta originale prevede 2 bustine di vanillina) – 1 pizzico di sale
Per la confettura di zucca allo zenzero (per circa 700 gr di confettura)
750 gr di zucca (polpa) – 300 gr di zucchero semolato – 1 bustina di pectina – 2 cucchiaini di zenzero – 1/2 cucchiaino di noce moscata – 1/2 cucchiaino di cannella
1. Per la confettura (da preparare almeno un giorno prima): unire la pectina allo zucchero e versare tutto in una pentola (o nel Bimby) insieme alla zucca, tagliata a cubetti.
Sul fuoco: cuocere a fiamma bassa per circa mezz’ora, in ogni caso fino alla consistenza voluta (prova del cucchiaino).
Nel Bimby: 100 gradi per 40 minuti circa, velocità 1 (antiorario).
Riempire di confettura dei vasetti precedentemente sterilizzati, chiudere ermeticamente e capovolgere fino a raffreddamento della confettura. Per maggior sicurezza sterilizzare nuovamente i barattoli pieni immersi in acqua bollente (sobbollire per almeno mezz’ora).
2. Preparare la pasta frolla. Lavorare burro e zucchero insieme, poi aggiugere le uova e tutti gli altri ingredienti. Formare una palla con l’impasto, ricoprirla con la pellicola e lasciarla riposare in frigorifero per almeno mezz’ora.
3. Una volta trascorso questo tempo, estrarre dal frigorifero la pasta frolla e stendere l’impasto su una spianatoia infarinata, avendo cura di metterne da parte almeno 1/3 per la decorazione della crostata. Con l’aiuto di un matterello formare un cerchio che superi di qualche centimetro il diametro dello stampo scelto per la crostata (io ho utilizzato due stampi da 20 cm).
Imburrare e infarinare lo/gli stampo/i e disporvi la pasta frolla lavorata. Modellare i bordi e forare il fondo con i rebbi di una forchetta, praticando tanti buchini su tutta la superficie.
Ricoprire con un foglio di carta forno e dei fagioli secchi e infornare in forno statico preriscaldato a 180° per circa 10 minuti.
Poi estrarre la crostata dal forno, eliminare il foglio di carta forno con i fagioli e farcire la crostata con la confettura di zucca e zenzero. Stendere la pasta frolla rimasta e formare tante striscioline da disporre sulla confettura, come in foto, per decorare la crostata.
Infornare nuovamente, sempre a 180°, per altri 30 minuti circa, fino a doratura della pastafrolla.
Lasciar raffreddare e…godersi questa meraviglia insieme agli amici!

Diciamo che a me ultimamente è successa la stessa cosa. Per rimediare sono entrata dal tabacchino e con molta indifferenza ho chiesto un francobollo, senza specificare nulla, ed in effetti lì ho capito che ormai esistono solo quelli di posta prioritaria. Ottima la crostata, questa confettura è sicuramente da provare, adoro la zucca anche nei dolci. Ciao!
