Piatto originale e di nicchia solo per palati pronti a sperimentare nuove frontiere del gusto! E’ una ricetta che ho preso dal ricettario “Il riso” del Bimby ed è davvero una novità che non avevo mai sentito prima (su internet c’è eccome, ma che vi devo dire, io non la conoscevo, e credo molti altri la ignorino). Se hai mai assaggiato il riso alle fragole e ti piace il suo sapore un po’ acidulo, provala. Io ci ho aggiunto i lamponi, ma si può fare anche solo con i mirtilli. Io intanto chiedo venia per la foto che è orrenda!
Ingredienti per 4 persone:
– 300 gr di funghi misti (se surgelati, il peso li considera già scongelati e scolati dall’acqua)
– 150 gr di mirtilli e lamponi
– 320 gr di riso (io ho usato il vialone nano, ma scegli quello che preferisci)
– 50 gr di vino rosso
– 750 gr di brodo vegetale bollente (o acqua e dado bimby)
– 40 gr di Parmigiano
– 1 cipolla rossa
– 30 gr di olio evo
In una padella fai rosolare la cipolla tagliata a striscioline e l’olio, poi aggiungi i funghi. Se hai la fortuna di averne di freschi (o magari tutti porcini freschi!) li avrai prima tagliati a pezzi (solo quelli che sono troppo grandi però!). Dopo alcuni minuti (in cui avrai girato il tutto con un cucchiaio di legno) aggiungi i mirtilli ed i lamponi, lasciandone da parte un paio di manciate per il finale (!). Passato un altro minuto aggiungi il riso e fallo tostare alzando la fiamma, fai insaporire per 3 minuti, sempre girando di tanto in tanto, e sfuma col vino.
Da questo momento abbassa la fiamma e comincia la cottura del riso, aggiugendo un po’ alla volta il brodo bollente, appositamente tenuto sul fuoco in un’altro recipiente. Cuoci per 12 min (o per il tempo previsto sulla confezione del riso che hai usato), controllando anche se serve aggiungere un po’ di sale. A cottura ultimata versa una delle due manciate di mirtilli e lamponi che ti sei tenuto da parte e versa il riso in una risottiera. Manteca con il parmigiano grattugiato e …anche burro se vuoi (a casa mia è bandito!). Decora con l’ultima manciatina di mirtilli e lamponi…come vedi dalla foto…io l’ho dimenticato!
Con il Bimby:
1. Metti nel boccale il parmigiano e grattugia: 10 sec./vel. 8-9 e tieni da parte
2. Metti nel boccale cipolla e olio: 3 min./100°/antiorario/vel. 1
3. Aggiungi i funghi: 3 min./100°antiorario/vel. 1
4. Unisci i mirtilli e i lamponi: 1 min./100°antiorario/vel. 1 (tieniti qualche frutto di bosco da parte per la decorazione)
5. Aggiungi il riso: 3 min./100°antiorario/vel. 1, senza misurino.
6. Sfuma con il vino: 1 min./100°antiorario/vel. 1, senza misurino.
7. Versa il brodo: 10-11 min./100°/antiorario/vel. 1.
8. Controlla la cottura e il sale, versa in una risottiera, manteca con il parmigiano e…con il burro (sempre se vuoi e se ti piace). Guarnisci con i mirtilli e i lamponi il tuo piatto..come io non ho fatto!
